Simple Pancake Mix Strawberry Shortcake

Ingredients:

For the Shortcake:

  • 2 cups boxed pancake mix
  • 2/3 cup milk
  • 1 egg
  • 1/4 cup sugar
  • 1/4 cup melted butter

For the Strawberries:

  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup sugar

For the Whipped Cream:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions: 1. Prepare the Strawberries:
  • In a medium bowl, combine the sliced strawberries and 1/4 cup of sugar. Stir well and set aside. Allow the strawberries to macerate for at least 30 minutes.

  • Preheat your oven to 375°F (190°C).
